Born and raised in Lafayette, LA, Chef Nicholas Harrison’s expertise lies in creating mouthwatering twists on Southern classics through the infusion of Creole cuisine. After moving to Austin, TX, in 2013, Harrison attended Auguste Escoffier Culinary School where he received his certification in culinary arts. After years of developing and elevating his craft in kitchens around Austin, most notably as Jr. Sous Chef at Olamaie, Executive Chef at Jacoby’s Restaurant & Mercantile and opening La Joie in Cedar Park, Harrison continues his culinary journey incorporating his heritage into the menu at Maie Day as Chef de Cuisine.
